Schnoor is definitely one of the best things that Bremen has to offer. It's the oldest district of Bremen, and the oldest houses are from the 15th century (the other ones are not too new either). It's a great place to just take a walk, but there are also several speciality shops, restaurants and bakeries. If you wish to have dinner there, it might be best to make a reservation, but in the early morning it's less crowded and makes it a perfect place to have e.g. breakfast on one of the lovely street cafés.
